Phytosterols are esters of fatty acids found in plants and have a molecular structure very similar to cholesterol. There are more than 200 different types of phytosterols, including beta-sitosterol, brassicasterol, campersterol and stigmasterol. Natural sources of phytosterols are vegetable oils, nuts and nut oils, seeds, grains and certain types of beans. Because of their similar structure to cholesterol, phytosterols are thought to participate in cholesterol synthesis and reduce the production and absorption of bad cholesterol, or LDL. Plant sterols have been shown to help lower blood cholesterol. The beneficial effect of plant sterols is achieved with a daily intake of at least 2 g of plant sterols.
